I've read that the Hyper-V product group recommends just taking the defaults on VMs.

But are there different applications where you would create a page in the VM that is beyond the defaults?

Stick with defaults.
General recommendations was 1.5 page vs RAM on physical.
Guests recommendations was 1 to 1.

Remember virtual page file is within shared disk generally so even slower access than normal. Unless you have specific config/ hardware to overcome that.

For Exchange, assuming vRAM > 32 GB, the recommendation is 32 GB + 10 MB = 32778 MB. Below 32 GB vRAM it's 1:1 as Joe said.

Went looking for the reasons for the +10MB...

So even on physical or virtual Exchange servers, Hyper-V or VMWARE, with 127GB of RAM, they advise 32GB +10MB of a page file.
The 10MB was (is?) To allow a bit extra to get a full dump should a server crash.
Had to post it!
